| Dr. Brett Savary, Arkansas Biosciences Institute and College of Agriculture,
recently presented a paper in the Agricultural and Food Chemistry division
at the 235th National Meeting of the American Chemical Society in New Orleans.
His presentation, "Structural Identification and Cloning of the Thermally-Tolerant
Pectin Methylesterase Purified from Citrus Fruit Pulp," detailed research
studies on an enzyme important in fruit juice product quality and in the
manufacturing of pectin, a plant material commonly used in gelling and thickening
foods. A patent application derived from this work was recently filed in
cooperation with the USDA Agricultural Research Service. Dr. Savary's group
also presented two posters selected for inclusion at the "Sci-Mix"
session, including one given by Dr. Prasanna Vasu, ABI, and another co-authored
by Dr. Daya Anandan, ABI. |
